Yes it shrinks - however you should have gained about half a litre of juice though.

mmmm nice gravies, I find meat shrinks no more than with any method of cooking. I remove meat when it reaches 160 deg F. Anything over that, I would expect even more shrinkage.

Good point pickles, it was nice and tender, but really I could have cooked it less. Nevermind, I know for next time
