Haven't tried this but its fromgrown upsthat has good recipes. Leek and Potato Soup: 2 rashers bacon, chopped, 3 medium leeks, finely sliced, 1 kg potatoes, peeled and sliced, 1 litre chicken stock, black pepper, 1/2 cup grated parmesan cheese. Heat some oil in a large saucepan add bacon and cook. Set aside. Add leeks to the same pan and cook for about 5 mins, place into crockpot. Add remaining ingredients, except pepper and parmesan cheese. Cook on HIGH 3-4 hours or LOW 6-8 hours. Cool and then blend untill smooth. Add bacon and reheat in crockpot for about 1 hour on HIGH, or untill hot. Season to taste with black pepper. Serve soup topped with parmesan cheese.
