I'm lactose intolerant and would like to be able to make a nice creamy rice pudding, I would use basamati rice or brown rice if i could get away with it ... any ideas? TIA

hmm, tried making it just following a normal recipe but using coconut milk..I think it would probably be quite nice.

I make a rice pudding by subbing So Good soy milk, it turns out fine.

Agree with the soy milk.I make mine in the crockpot and it turns out really nice.Just mixing through an egg at the end to thicken more.

It is amazingly good with coconut milk - I don't have a problem with eating dairy but prefer it that way. :-)

i've just put one in the oven with brown rice and soy .. but next time will try the coconut milk cos that sounds dreamy!
