I remember as a child have this beautiful home made rice type pudding with pineapple and something..... Cant find a recipe anywhere for it and family members cant remember who used to make it.... Can anyone help???

Not sure if this is the one you are after? It is called pineapple rice cream from the"A Good Spread" book which is a compilation of recipes from the rural women of NZ.
2 1/2 cups milk 1/2 cup short grain rice 3 tbsp sugar 1 tsp vanilla 1 medium can crushed pineapple 1 1/2 cups cream, whipped.
Bring milk to the boil, sprinkle in rice. When boiled, reduce heat and simmer, covered, for 45 minutes or until milk has been absorbed. Remove from heat;add sugar and vanilla, cool. When cold, fold in crushed pineapple and whipped cream.

one i used to make, boil the rice, add a tin of condensed milk and a tin of drained crushed pineapple. easy and yum.
