Toasted Coconut Chocolate Chip Cookies

These toasted coconut chocolate chip cookies are soft, chewy, and packed with flavor. Perfect for a vegan treat!

▪️ 1 stick softened vegan butter
▪️ 1/2 cup brown sugar
▪️ 1/4 cup white sugar
▪️ 1/2 tsp vanilla extract
▪️ 1 flax egg or egg replacer
▪️ Pinch of salt
▪️ 1/2 tsp baking soda
▪️ 1 1/4 cup all-purpose flour
▪️ 1/2-3/4 cup shredded toasted coconut (unsweetened)
▪️ Vegan chocolate chips

1. Preheat Oven: Preheat oven to 350°F and line one large or two smaller pans with parchment paper.

2. Toast Coconut: Place shredded coconut evenly in a pan. Cook over medium-high heat, rotating occasionally until browned and fragrant (about 4 minutes). Set aside.

3. Prepare Dough: In a large bowl, beat together vegan butter, brown sugar, white sugar, vanilla, flax egg, and salt. Add flour and baking soda, and mix until a dough forms. Fold in chocolate chips and toasted coconut.

4. Form Cookies: Roll dough into balls (about 12) and place on baking sheet.

5. Bake: Bake for 12-14 minutes or until edges are just set. Let cool before eating.
