Toadfish's Brown Rice Salad is a crunchy and tasty dish that's always well-received. Made with brown rice, fresh vegetables, and a flavorful dressing, this salad is perfect for any gathering. Ingredients:
▪️ 1 cup brown rice
▪️ 1 3/4 cups water
▪️ 1/4 cup light soy sauce
▪️ 1 onion, finely chopped
Additional Ingredients (Next Day):
▪️ 1 red capsicum, diced
▪️ 1/2 cup roasted peanuts
▪️ 1/2 cup roasted pumpkin seeds
▪️ 1/4 cup roasted sunflower seeds
▪️ Handful of sultanas
Dressing:
▪️ 1/2 cup olive oil
▪️ 2 tablespoons lemon juice
▪️ 1 teaspoon lemon rind
▪️ 1 clove garlic, crushed
▪️ 1 teaspoon ginger
▪️ 1 teaspoon honey
▪️ Pinch of salt
Method:
1. Cook the brown rice in water. Once cooked, add soy sauce and onions. Leave for a few hours or preferably overnight.
2. The next day, add diced red capsicum, roasted peanuts, roasted pumpkin seeds, roasted sunflower seeds, and sultanas to the rice mixture.
3. For the dressing, combine olive oil, lemon juice, lemon rind, crushed garlic, ginger, honey, and a pinch of salt. Mix well.
4. Pour the dressing over the rice mixture and toss to combine.
