Mango Quinoa Salad with Halloumi

Mango Quinoa Salad with Halloumi

The 6 ingredients refer to the SALAD ingredients. The dressing ingredients are additional. This isn’t designed to trick you, I just want to help you eat a little healthier and change up your normal lunch or dinner recipe. I have a tendency to throw 14 ingredients in a salad, so was really trying to limit this to make it easier for you.

Serves 4

Ingredients:
1 cup white quinoa
2 lebanese cucumbers, diced
1 large mango, diced
1 large avocado, diced
1/2 cup dill, roughly chopped
200g halloumi cheese, cut into cubes or strips

Dressing:
2 tablespoons extra virgin olive oil
1 large lime, juiced
1 tablespoon honey
1 jalapeño, deseeded and finely chopped (optional)
Salt/Pepper

Method:

1. Rinse quinoa well under cold water using a strainer. Once water is boiling, add quinoa, reduce the heat to very low, simmer for 15 mins, or until quinoa is cooked with a nutty bite. Strain and set aside, let it come to room temp. Fluff with a fork.

3. To assemble the salad: Add the quinoa, cucumber, mango, avocado and dill. Combine gently. Season well.

4. For the dressing: Whisk together all ingredients in a bowl. Season well with pepper and salt. Adjust to taste.

5. Pan-fry the haloumi for 2-3 mins each side, turn over and pour in a quarter of the salad dressing in the last 30 seconds and rub into the halloumi. Remove and add to the salad. Drizzle over the remaining dressing, enough to just coat the salad and toss together.
