Berry Chicken Salad: A Classic Twist for Sandwiches and Snacks
My mum use to make these chicken sandwiches and the filling is just such a classic. It’s perfect for meal prep bcos you can have it for lunch in sandwiches/wraps or as a high protein snack with crackers 😍
I love this little twist using @nibblish mixed berries for a sweet element!
Ingredients:
2 cups roast chicken (store bought or homemade)
1 stalk celery
¼ cup onion (red or spring)
¼ cup @nibblish mixed berries
2 tbs walnuts (optional but adds a nice crunch)
1 tbs fresh dill
¼ tsp onion power & garlic powder
Sauce:
¼ cup greek yoghurt
¼ cup whole egg mayo
1 tsp dijon mustard
1 tbs lemon juice
Method:
1. Place the roast chicken in a large mixing bowl and shred with two forks.
2. Finely chop the remaining ingredients and add to the bowl.
3. Add the sauce ingredients and mix until well combined.
4. Season with salt and pepper to taste. Store in an airtight container in the fridge and use for sandwiches, wraps or with corn chips.
