Berry Cheesecake
Biscuit Crust:
▪️ 3/4 packet malt biscuits
▪️ 75g butter
▪️ 1/2 teaspoon cinnamon
▪️ 2 tablespoons brown sugar
Filling:
▪️ 1 cup cream cheese
▪️ 400g tin sweetened condensed milk
▪️ 1/4 cup lemon juice
▪️ 1 teaspoon vanilla
Glaze:
▪️ 1/2 cup fruit juice (raspberry, boysenberry)
▪️ 2 tablespoons sugar
▪️ 2 teaspoons cornflour
▪️ 1 cup drained berries
Make the Crust:
1. Crush biscuits finely.
2. Melt butter with cinnamon and brown sugar.
3. Mix with biscuit crumbs and press firmly into a pie plate.
4. Chill until set.
Make the Filling:
1. Whip the cream cheese until fluffy.
2. Gradually add the condensed milk, lemon juice, and vanilla.
3. Pour into the crust and chill for 2-3 hours.
Make the Glaze:
1. Blend juice, sugar, and cornflour.
2. Cook, stirring, until thickened and clear.
3. Add drained berries and cool.
4. Spread over the chilled pie.
