BBQ chicken loaded fries 🥔
BBQ chicken loaded fries 🥔😍 we’ve been eating this meal on repeat for the last month! It’s a slightly healthier version of loaded fries but still so yummy
Ingredients:
250g potato, thinly sliced
100g chicken breast
1 tsp olive oil
1/4 tsp each - garlic powder, onion powder, paprika & salt
2 tbs barbecue sauce
1 cup baby spinach, chopped
1/2 tomato, diced
1 tbs fresh parsley, chopped
1 tsp vinegar
20g cheese, grated
1/2 tbs light mayo
Method:
1. Slice the potatoes into fries and place in a bowl with 1/2 seasoning and olive oil, toss to coat. Air fry or bake for 20-25 mins at 200 Celsius.
2. Place chicken on a sheet of foil, coat in remaining seasoning and oil. Wrap it up and air fry for 15 mins at 200 Celsius.
3. Place the cooked chicken in a bowl, shred with 2 forks and mix in the bbq sauce.
4. For the salsa, add the spinach, tomato and parsley to a bowl with vinegar & mix to combine.
5. To assemble, place the chips in a serving bowl, add with bbq chicken and cheese. Top with salsa and mayo to serve.
