5 ingredient rice cake truffles

Ingredients:
▪️ 12 rice cakes
▪️ 1 banana
▪️ 5 Medjool dates, pitted
▪️ 1/3-1/2 cup nut butter (I used peanut butter)
▪️ 50-70g melted dark chocolate, for the coating (I used dairy-free chocolate)

Method:
▪️ In a food processor, combine rice cakes, banana, dates and nut butter. Pulse until the mixture resembles crumbs and sticks together.
▪️ Using your hands, form tablespoons of the mixture into balls.
▪️ Place the balls in the freezer for 15 minutes to help the chocolate coating set faster.
▪️ Remove from the freezer and dip each treat into the melted chocolate. Decorate, if desired.
▪️ Once the chocolate is set, enjoy right away or store in the fridge for up to 7 days.
