Prawns + rice?

What would you put in with the rice, and what sauce would you use?
I'm thinking spring onions and parsley in the rice, with a creamy garlic sauce.
My husband starts to look a bit scared when I experiment.

I would cook the prawns in coconut milk with thai sweet chilli sauce, and put the rice on the side.

I cook diced onion, garlic and red pepper till soft, add one cup uncooked short grain rice, 3 C chicken stock, a pinch of saffron dissolved in a small amount of the stock, cook till rice is just tender, then add prawns and a liberal mount of finely chopped parsley. I sometimes add some sliced chorizo with the peppers etc and a good teaspoon of smoked paprika. YUMMM!

Fry garlick and butter then add prawns, toss lightly, then add Arak or another alcohol that flames, flame the prawns, add a cream or can of tinned nestles milk. Then put coriander on the top, serve with rice and Chardonnay . A Romanian friend made this for my lunch once and I have never forgotten the recipe and it was delicious!I use it all the time.
