I need to take "vegetables" to my sister in laws birthday dinner...the main course is a chicken dish that has chicken, broccoli and a creamy curry sauce in it...MIL is doing potatoes...and I am to bring "vegetables"....I have no idea what to do...any ideas would be gratefully received....

I would maybe do a nice big platter of mixed roast veges or a kumara dish

What about something like this
Roasted Thyme Scented Carrots

2 pounds carrots (approximately 12 medium), peeled and trimmed
3 tablespoons extra virgin olive oil
½ teaspoon dried thyme
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 tablespoon salted butter, quartered

Preheat the oven to 400°F.
Cut the carrots in half and then halve them lengthwise. In a large mixing bowl, toss the carrots with the olive oil, thyme, salt, and pepper. Transfer to a 9 by 13-inch rimmed baking sheet and roast until the carrots begin to brown, 45 to 50 minutes, flipping the carrots midway through the cooking time.
Remove the carrots from the oven, transfer them to a serving dish, and top with the tablespoon of butter.

Serves 4
Also take a bag of frozen peas and some fresh mint, and butter!
