Help l only have silverbeet,tomato, onion and need

a recipe for a salad for tonight my mind is blank and l am working on the farm all day so please if someone has a quick salad & dressing recipe l would be really grateful for your ideas, oh and l have some cucumbers as well

Easiest dressing I find is olive oil, lemon juice, cracked pepper & chopped herbs. You could make a cucumber & yoghurt with mint salad if you have the youghurt & mint. If you have some eggs, hardboil & chop & mix with copped tomatoes - sprinkle with chopped herbs & drizzle with dressing.

Chopped silverbeet, mint, sweet pepper, glace' ginger(opt), red onion, chopped tomato, and any other salad vegetable that you have on hand. Mix all together. At last minute pour over dressing made with juice of a lemon, teaspoon sugar and 1/4 cup olive oil. It is the mint and glace ginger that make this a lovely spicey salad.
