Veggie Tacos with Roasted Sweet Potatoes and Paneer

Ingredients
▪️ 1 cup sweet potatoes, peeled and diced
▪️ 1 cup paneer, cubed
▪️ 1 red onion, sliced
▪️ 1 tablespoon olive oil
▪️ Salt and pepper to taste
▪️ 1 teaspoon cumin powder
▪️ 1 teaspoon paprika
▪️ 4 small tortillas
▪️ 1 cup mixed greens
▪️ 1 cucumber, sliced
▪️ 1 tomato, sliced
▪️ 1/4 cup cilantro, chopped

Method
1. Preheat the oven to 200°C (400°F). Toss the diced sweet potatoes and cubed paneer with olive oil, salt, pepper, cumin powder, and paprika. Spread them on a baking sheet and roast for 20-25 minutes until tender and golden.

2. While the vegetables are roasting, sauté the sliced red onion in a pan until caramelised.

3. Warm the tortillas in a dry skillet over medium heat until pliable.

4. Assemble the tacos by layering mixed greens, roasted sweet potatoes, paneer, cucumber slices, tomato slices, and caramelised onions on each tortilla.

5. Garnish with chopped cilantro and serve immediately.
