Vegan Buckwheat Bread

Vegan Buckwheat bread I made yesterday with lots of mixed seeds.
Buckwheat flour is great for making gluten free vegan bread & pancakes.

Buckwheat is one of the healthiest, nuttiest, most versatile whole grains and despite its name, it's really not related to wheat at all. Buckwheat is actually the seed of a flowering fruit that is related to rhubarb and sorrel.
It is a source of complete protein so great for vegans and vegetarians & high in fiber.
This humble super seed is naturally gluten free and has a number of health benefits.
👍it is high in magnesium, a nutrient which many of us are deficient in so improving relaxation & sleep.
👍Helps with weight management as it has a low glycaemic load which means it doesn’t cause the sugar spikes that other grains can.
👍Balances your energy as a good source of the B-vitamins 👍Provides excellent antioxidant protections because of Rutin & other flavonoids in there. It is thought that it has just as many antioxidants as many fruit and veg.
Also, I think it is one of the better flours to use in vegan pancakes for a fluffier pancake! Get your buckwheat on! 🙌

Simple recipe for the bread:
🍞🍞🍞🍞
150g almond meal
140g buckwheat flour
3 tbsp chia seeds
3 tbsp psyllium husk (optional)
1 cup mixed seeds
2 tsp bicarbonate soda
1/2 tsp salt
2 tbsp maple syrup
2 tbsp apple cider vinegar
500mls water

Add dry ingredients together, the wet ingredients seperatly and fold one in to the other. Leave the mixture aside and cover for an hour or so and it will be more dough like.

Meanwhile heat oven to 180 degrees and cook for about an hour.
Yummy heated with some cashew nut or almond butter!
