Try this easy dessert to have with fruit.
Easy Dessert
1 can Carnation Evaporated Milk (It is gluten free Chilled overnight or at least 4 hours)
1 Greggs Raspberry Jelly (its gluten free)
Make up jelly with 1 cup boiling water and when set to the consistency of a runny eggwhite beat up a can of evaporated milk until thick. Now beat in Jelly and let set about 1/2 hour.

thankyou earthangel4 am noticeing huge changes since going gluten free all for the best, but gosh my appetite has changed what do you people enjoy snacking on? am over corn thins and rice crackers lol

Melfords Breadmaker Bread . Make up the bread mix first. 4 cups white rice flour, 1 ½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but it makes a very small loaf so I one and a half times the recipe that follows and cook for the same time). One loaf : 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar.
Sift dry ingredients and add yeast Blend milk oil eggs or egg replacer, vinegar. Add to dry ingredients mix to combine. Press into bread pan. Close lid bake following instructions for a white loaf(about 3 hours) Cut when cold freeze in slices unless going to eat. Do not double recipe as it overflows pan only use one and a half times the mix for a 1kg loaf

Hi, I've been a lurker in the gluten free threads for a while - since the TTG came back indicating quite strongly that my little girl is coeliac in fact.

She's going under a general for a biopsy and endoscopy on Friday, - she's four - to ascertain whether she is in fact coeliac.

Sorry, this is a bit rude no doubt.

But what upsets me is that something that is a rather painful reality is becoming a political minefield.

And I must say melford, I've really appreciated your recipes and moderate stance.

I have a friend with a little girl who has one of the highest TTG indicators that either Rodney Ford or Mr Ding had ever seen - and she is a great source of information for what items her daughter can use as being non-gluten. It's really interesting, she's found Signature Range, and Pams etc, to be really good for it in many ingredients.

I am joining this thread too... as i have a 3. 5 yr old that i suggest is gluten intolerant. at the moment we are also lactose free... off to the dr to get allergy tests done... will be back in a few days.

ruger, for me it was my daughter.

She had been complaining of a stomach ache for a number of weeks - we went to the doctor and one of the things she got done was a TTG bloody test.

It come back with a very high count, indicating coeliacs.

We were referred to the specialist, having been told very firmly to keep her on a normal, gluten inclusive diet until he had performed an endoscopy and biopsy.

This was done yesterday, and what he saw indicates yet more strongly that she has coeliacs.

How I found out I was gluten intolerant was theMedical Herbalist I went to told me about it and put me on the GF diet, this was after going to "normal" doctors for around 5 years. I noticed a bit of improvement after about 3-5 days, then once I cut out cows milk Iimproved again (this was about a month or two after this) and the last thing I found that was causing me problems was the vege gums and once I stopped eating anything that had them in I pretty much became normal again :)

Thanks for that mbos, Im not cautious because I choose to be that way, I have to be so careful as even the smallest amount of gluten affects me really badly :)

Gluten free Szechuan Chicken Stirfry

Ingredients:
2 Chicken Breasts
1 Zucchini, chopped
1 Red Pepper, chopped
1 Yellow Pepper, chopped
3 Spring Onions, sliced thinly diagonally
1/8 tsp chilli pepper, crushed
1 tsp garlic, crushed
1 tsp ginger, crushed
2 Tbsp vinegar
Cooking oil

Sauce:
1 tsp Chicken Stock (must be GF, such as Massel)
1 Tbsp Raw Sugar
2 tsp Cornflour (ensure it is gluten free)
3 Tbsp Tamari Soy Sauce
1 Tbsp Dry Sherry
1/2 Cup Hot Water

Slice the chicken breasts thinly across the grain, stack the slice then cut again into matchsticks. Combine sauce ingredients.

Heat the oil in a wok/frypan over a high heat. Add the chicken and stir-fry until white, remove with a slotted spoon and keep warm. Add chilli, zucchini and peppers to the wok and stirfry until beginning to soften.

Add garlic and ginger and stirfry briefly, then add vinegar and return chicken to pan. Stirfry for a minute or two, then pour over the mixed sauce. Lower heat and cook until thickened. Add the spring onions right before serving.

Serve on rice. Serves 4.

In terms of gluten, you have to watch the soy, chicken stock and the vinegar. Pre-GF I used malt vinegar, but since I've made it with white vinegar with good results. I used to use Mirin instead of Dry Sherry, but stuff in our pantry has gluten in it.

Thanks for the recipe - it sounds great.
Two new gluten free products are just out. They are Breakfast cereals by Hubbards. One is Cocoa Puffs and the other is Cornflakes. They are gluten free dairy free soy free and no artificial colours added.
