Gluten Free High Fibre mix for constipation Mix 1/2 cup whole linseed
1/2 cup rice bran
1 tsp cinnamon. Add enough water, apple juice, low fat milk or soy milk to cover. Refrigerate
Use 1-3 tbsp on your breakfast cereal, topped with yoghurt or milk. It tastes mild and slightly sweet

Thats a very helpful recipe but make sure you check the ingredients list on the back of the cinnamon, and all spices and herbs.Some brands have gluten in and some are made on a production line that also handles gluten containing foods :)

refreshing drink for hot days I make up a pot of green tea with two bags (about a litre of water, could add more bags), cool add add about 4 teaspoons of sugar to taste and about 120mls of fruit juice to give it a bit of flavour. Put in fridge and drink cold, with iceblocks if needed. Great after a big day digging the garden.

herika - I am sick to death of you coming in "sensoring" everything. For goodness sake leave people to check their own ingredients - butt out! That recipe was published by the specialists at the hospital especially for coeliacs (who incidentally no more than you do believe it or not) butt out!

Apricot Balls: Whiz 250g dried apricots with 1/4 cup (or less) sugar, the rind of 1 orange, 1 tlbsp orange juice and 1/2 cup coconut.Shape into balls and roll in extra coconut. Freeze well. :)

what a great recipe cathy I might try it using Earl Grey or other herbal teas, just the thing in this hot weather :)

If you use Earl Grey tea make sure it doesn't have vanilla in it as it may contain gluten. Also check the labels on all herbal teas as some contain gluten

herbal tea The green tea I use, is just straight green tea. I got caught out once with a flavoured tea, I think it was lemon tea. Never again as I was sick as a dog.

Herikia, I would be careful of coconut as well, as a lot of it has been packaged on sites that handle gluten

beetroot gone are the days when I can use malt vinegar for my home grown beetroot. Anybody know if dyc white vinegar will be okay! Anything else I can use!

I have been told DYC white vinegar is gluten free but I have tried it a number of times and have reacted badly each time so I can only suggest you try it and see what happens.I use cider vinegar quite successfully. :)

Curried chicken I use dyc white vinegar all the time. I've had no problem with it.It makes a damned good curry. Mix 1 dessertspoon of white vinegar, 1 dessertspoon of oil of your choice and 1 dessertspoon of gf curry powder. Heat mixture in the frying pan, then add one sliced and diced onion, 500g of cubed chicken and cook.Add water if necessary and thicken with maize cornflour if you need to. Eat with rice. Yummo. You can use the same curry for a vege stirfry as well

Twas a bad cooking day Made banana muffins, chocolate muffins that muffined, fruit rocks were perfect. But the piece de resistance (no) was the gf hats that came out of the oven. They were meant to be a coconut loaf that I thought I would make into muffins. But they spilled out and looked like bonnets in the end. Nice and crunchy. Anybody want my rock cake recipe! They are similar to the rock cakes that my mum made when I was little.

cathy I preserve with white vinegar and it tastes fine. I also use some of the water that the vinegar is boiled in too to improve the colour.

Carrot Cake 200 gm GF flour (I use Bakels as I find this gives good results and the cake stay lovely and moist - keep in the fridge)
2 tsp Baking Powder
1 tsp cinnamon
Good pinch fresh grated nutmeg
1/2 tsp salt
400 gm soft brown sugar
350 ml vegetable oil
4 large beaten eggs
400 gm grated carrots
1/2 cup chopped walnuts
Preheat oven to 180C
Sift flour soda cinnamon nutmeg salt
Mix sugar and oil in another bowl and mix in eggs
Make a well in flour and stir in liquid, carrots etc
Bake 1¼ hours. Ice with
12 gm olivani
3 drops vailla essence 1 tin pineapple (crushed and drained)
125 gm creamed cheese(Country Goodness)
Sprinkle top with chopped walnuts

Absolutely delicious.

Baked Chicken Breasts Skin chicken breasts
Slice through lengthways to make a pocket.
Flour using GF Flour
Dip in beaten egg and then lie on top of Gluten Free Breadcrumbs so that the egg is facing up on one side. Place a small piece of camembert cheese on top(Ferndale, Galaxy or Mainland)In a small dish melt 1 tbsp olivani and add to that 1 chopped clove garlic) Place a few drops on each fillet. Fold fillet over and secure all round with toothpicks. Spray with Olive Oil and bake 180 40 minutes Serve with Barkers Mango and Peach Chutney

Wait theres more my chocolate muffins turned out looking like baseball caps. They oozed out. Another question, frozen bananas,they are so hard to get out of their skins. Would it pay to freeze them skinless, or just persevere with trying to skin them. Somebody mentioned they make nice icecream and I was thinking of that as I was peeling, they do have a consistancy of icecream when you mash them.

hi cathy - I freeze them with the skins on and when needed for baking I just pop them in the microwave just enough to soften them so the skins can come off easily

yum thanks melford for the carrot cake recipe,, it is very nice.
this was in last weeks sunday times. jo seagar.

almond, orange biscuits.
2 cups ground almonds, walnuts or , hazelnuts, 2 egg whites beaten until stiff,1 cup caster sugar, zest orange, 1tablespoon honey.
add dry ingredients to egg whites roll into balls roll in icing sugar
flatten, 160c for 15-20minutes. makes about 20. allow room for spreading. they freeze well.
