Apricot Balls: Whiz 250g dried apricots with 1/4 cup (or less) sugar, the rind of one orange, 1 tlbsp orange juice and 1/2 cup coconut. Roll into balls in extra coconut. These freeze well :)

Recipes containing pureed fruit, shredded veggies, yogurt, or sour cream translate beautifully to gluten-free. Think: banana muffins, carrot or pumpkin cake, sour cream apple cake.
Adding applesauce, pureed fruit or yogurt to recipes helps gluten-free cakes, muffins and quick breads stay moist.
Adding shredded or desiccated coconut, chopped nuts, dried fruit, and chocolate chips also goes a long way to improving texture and flavor. Start with adding one half cup to your favorite recipe. Experiment and have fun.
Use organic brown sugar instead of refined white sugar. It boosts moistness and flavor :)

good, hearty breakfast is to cook up some brown rice and have it with fresh fruit and chopped almonds (and whatever milk you have)yum and very healthy! Cook enough rice for the week and keep it covered in the fridge :)

Almond and Rice Bread: 1/2 cup whole almonds, with skins, 1 1/2 cups brown rice flour, 4 tsp GF baking powder, 1/4tsp salt, 3 tsps poppy seeds, 1/2cup plain low-fat yoghurt, 1/2 cup water, 1 large whole egg, 1 large egg white, 2 tlbsps vege oil. Preheat oven to 180oC. Grease 8x4inch loaf pan. Place almonds and 1/2c of the flour in bowl of food processor grind til a fine meal is formed. Add rest rice flour, baking powder, salt and 2tsps of poppy seeds process briefly. Combine the remaining ingredients in a 2 cup measuring cup. With processor running pour liquid ingredients through feed tube over flour mix processing just long enough to mix. Transfer batter to prepared pan. Sprinkle with remaining seeds bake 55 minutes. Turn out on rack to cool. Slices best after several hours or next day :)

Strawberry Smoothie 250g strawberries, hulled, 1 tsp clear honey (optional), 4 bananas, 1 tlbsp flaked almonds. Puree strawberries and honey together in blender or place in bowl and mash with a fork. Transfer mixture from blender to bowl and chill if desired. Slice bananas into individual dishes and pour over the puree. Scatter the almonds over and serve immediately. Serves 4. :)

Stir fry meals are quick and easy.For variety you can use different combinations of vegetables. Use fresh herbs for flavouring and season with salt and freshly ground black pepper. If you want to flavour it with a soy sauce:Braggs Soy sauce is gluten free and made with non GMO soy beans.It has no alcohol, additives or preservatives in it, only soy beans and purified water.Serve with rice or rice stick noodles or GF pasta.If you want it to be more like Chop Suey, for a change, add gf liquid stock (homemade is best) anduse maize cornflour to thicken the sauce.

I have tried the Burgen bread with linseed in it.Didnt care for it as it seemed to me to taste of stale flaxseed.Flaxseed can go off very quickly and is very unpleasant but it may be my tastebuds at fault here.
Has anyone else found this problem with the linseed variety.I havent tried the other versions but hope they are better.
I tried the Lievito g/f bread and it was very good.It is made in Otago but they do deliver around the country.Am hoping the supermarkets will start stocking it.

That's better.Have tried the Burgen White and it toasted very well ,fine .tried it as a sandwich .not so good , a bit hard to swallow.tried it in sandwich maker very sweaty on uncooked side .am trying the Fruity one next for toasting.and the Linseed.isn't it great to be finding more foods that suit us on the shelves.
nice to see some recipes from herika too.as many havesaid we all have to be responsible for ourselves and be aware of what suits us and what doesn't.will add these ones to my melford recipes to try .thanks all.

Can't remember if I've sent this one .G/F sausages are sometimestoo dense and a bit yucky cooked the ordinary way.I am now pricking them all over putting in casserole a little finly chopped onion then mixing up a vegetable G/Fsoup and putting over them in a casserole .the sausage puff up and are tender.so nice my non g/intolerant non/coeliac husband prefers them to his ordinary ones.mind you our butcher makes a mean G/F pork sausage.and also does G/F sausage meat so I can now make our favourite meat loaf again.it is worth asking.

Janets Gluten Free Bread(off TV One) 1 tsp sugar
150ml warm water
1 tsp dried yeast
175g gluten-free flour
50g instant milk powder
1/2 tsp salt
8g butter or margarine or lard

Method:

- Grease 450gm loaf tin.
- Add sugar to the water and sprinkle into the dried yeast.
- Leave until frothy (about 10mins)
- Place the dried ingredients in a bowl and rub in fats.
- Add the yeast liquid and beat to a smooth batter.
- Pour into the loaf tin.
- Place tin in a lightly greased poly bag and leave until mixture reaches top on tin.
- Bake at 190 Celsius / Gas Mark 5 for 30mins

For a cheese loaves add 75g finely grated cheese seasoned with freshly ground pepper to the dry ingredients.

Gluten Free Bread (off TV One) Plain
450 ml tepid water
1/3 cup oil
3 eggs
1 tsp white vinegar or lemon juice
380g rice flour
120g arrowroot
100g buckwheat or brown rice flour
70g chickpea flour
1! tbsp sugar
1 tbsp Xanthan or Guar Gum
3 tsp yeast
1 ! tsp salt

For Grainy Bread

Add 3 tbsp seeds (Linseed/flax, Sunflower, pumpkin seeds or buckwheat kibble) or LSA.

Method

1. Preheat oven to 60 degrees Celsius and line a loaf tin with baking paper.
2. In mixing bowl add tepid water, sugar and yeast and leave for 2 minutes
3. Add rest of sifted ingredients to mixing bowl and mix for 5-7 minutes at low/medium speed. The dough should resemble mashed potatoes.
4. Spoon mixture into loaf tin and place in the oven for 30-40 minutes until risen.
5. Increase oven temperature to 200 degrees Celsius
6. Bake for 35-40 minutes or until bread has risen and golden.
7. When tapped the bread sounds hollow.

It is really easy to make and tastes great.

Gluten-free Ginger Crunch 125g butter
125 g sugar
200 g gluten free flour
1 tbsp ground ginger
1 tsp gluten free baking powder
2 tbsp preserved ginger - finely chopped

For the icing:

4 tbsp butter
8 tbsp icing sugar
2 tbsp golden syrup
2 tsp ground ginger

For the garnish - 2 tbsp chopped preserved ginger

Method:

Pre set oven to 180 degrees Celsius.

1. Cream butter and sugar, then sifted dry ingredients - knead well.
2. Add chopped ginger
3. Press into greased shallow tin

Bake 20 to 25 minutes

For icing:

1.Into a pot add butter, icing sugar golden syrup and ground ginger.
2.Heat until melted then pour over hot cake.

Top with chopped preserved ginger, then cut into squares before it gets cold.

90gBicarbonate of soda
50gCream of Tartar
50gTartaric Acid

Method:

- Mix all the ingredients together and rub through a fine sieve
- Repeat sieving twice
- Store in an airtight container.

I prefer to do it slowly at 160C for about1 and a half hours.gives me time to get veges ready for steaming andhave a wee sit down too.Have done this with Hellers Steak and Onion G/F sausages and also with our Main Street Butcher's Temuka G/F Irish pork sausages.am planning to try out a Sweet and Sour version when I work it out.

Delicious Salmon Steaks. Marinade them in this for 5 minutes minimum
3 tbsp freshly sqeezed lime juice
1 tbsp Tamari Soy Sauce
1 chopped fresh clove garlic
1 tbsp Watties Gluten Free Bit on the side Sweet Chilli Sauce
Few sprinkles coarse salt

Now pan fry for approximately 2-3 minutes Serve with salad and a baked potato

Thanks for asking Pommyjohn1.my recipe for meat loaf is 4 to 500 grams good mince,4 to 500 grams Sausage meat .if h your butcher makes his own he will make up packets for you otherwise skin some G/F sausages under a running cold tap and use.mix the meats.mix the meats,break in 2 eggsand a cup of G/F bread crumbs,a2 tsps chciken or other G/F stock. put about half a cup of dried veges in a cup and top with boiling waterand when swollen up mix into meat mixture.I used to steam this mix in a pudding basin in a sauspan of boiling water .now I bake it in a cover casserole.very nice hot as part of a meal with spuds and veges .also tasty cut in a slice cold like a piece of cake. I cook it for 1 to 1 and a half hours at 180 C.depend on how hot your oven cooks and if you have fan assisted or not.

is wheat starch gluten free I just use 2 parts cream of tartar and 1 part baking soda for baking powder :)

I use gf sausages for curry. Heat 1 dessertspoon each of oil and white vinegar. Add 1 dessertspoon of curry and fry for a minute or two. Add chopped onion about 6 - 8 cut up gf sausages. i add about 1/2 cup water and let this mixture simmer away for about 15 - 20 minutes.If it is too runny you can thicken with your own thickener, if too dry add more water during cooking.Serve on rice. Kids love it.

Yes wheat starch is gluten free - it has had the gluten removed during the processing
