Blackberry Bars

1 cup coconut flour
1/2 cup shredded coconut
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup sugar/agave/maple syrup/honey/sweetner of choice
2 bananas (about 1 cup)
2 eggs
2 tbsp coconut oil, melted
1 tsp vanilla extract
1/2-1 cup almond milk
1 cup blackberries, fresh or frozen (or berry of choice)

Preheat oven to 180 degrees. Grease a baking pan.
In a bowl, mix coconut flour, shredded coconut, cinnamon, baking powder and soda, and salt. Add in the sugar (or substitue, mixing again.
Add in the bananas, eggs, melted coconut oil, vanilla extract, and 1/4 cup almond milk. Mix until all ingredients are incorporated, adding in more almond milk, as needed for mixing.
Fold in the blackberries and spoon the batter into the greased pan. Bake for 40 minutes or until the sides are golden.
Remove from oven and cool. Cut into about 16 squares.

Tastes Devine Brand "BBQ Pork Rib mix" is gluten free and absolutelydelicious. I bought it from Fresh Choice in Merivale Mall but I haven't seen it anywhere else. It is not even on their website. You just sprinkle the spice on raw pork ribs and leave it in the frdge for an hour then bake them without adding anything else. The "mix" goes all sticky and brown and it really does taste devine. Well worth trying to source this in your area.

Carrot Salad

4 cups shredded carrots
1/2 cup raisins
1/2 cup pineapple, finely diced
1 cup mayonnaise, preferably homemade
Salt and freshly ground black pepper, to taste

Toss the carrots, raisins and pineapple in a large bowl with the mayonnaise until mixed. Taste; season as needed.
Refrigerate for an hour to allow the flavors to blend. Serve cold.

Sweet and Sour Cabbage

1 medium head red cabbage, thinly sliced
2 tablespoons olive oil
1 large Granny Smith apple, sliced
1 medium yellow onion, peeled and thinly sliced
2 teaspoons kosher or sea salt
1 teaspoon freshly-ground black pepper
1/2 cup apple cider vinegar
2 tablespoons honey

Heat the olive oil in a large pan over medium heat.
Add the cabbage, onion and apple; cook until the cabbage begins to soften and the mixture reduces slightly, about 10 minutes.
Add the salt, pepper, cider vinegar and honey; turn down heat and continue cooking, stirring occasionally, until the apple and onion are very soft and the cabbage has reduced by about half.
Taste, season with more salt and pepper if needed, and serve.

Creamy Scrambled Eggs with Goat Cheese and Basil

1/2 tablespoon butter
2 large eggs
40gsoft goat cheese, broken into small pieces
1/2 tablespoon fresh basil leaves, thinly sliced
pinch kosher or sea salt
2 or 3 grinds black pepper

Melt butter in a small pan over low heat.
In a small bowl, whisk the eggs, salt and pepper together with a fork.
Pour the eggs into the pan; immediately begin stirring with a spatula. Stir constantly until the eggs are creamy but almost set. Remove from heat and stir in the goat cheese.
Sprinkle with the basil and serve.

2halls cake (#44) again! I made the original again and also made a version with pears and ground ginger (in place of mixed spice and apples) which worked really well. Last night I made an apricot and cardamom variation with 1 diced apple and 2/3 cup soaked (in apple juice) organic dried apricots and 2 tsp ground cardamon for the fruit and spice. I also subbed chestnut flour (a good gluten-free, high protein flour) for the custard powder. For anyone not keen on buckwheat I'm certain this would work well with rice/soy/maize flours - ideally a mix of them. The method is really simple and seems to be pretty fail safe!

I am gluten free for 4 years - tested for coeliacs while GF and so tested negative - Sometimes I really struggle - I seem to not be able to have anything with dried fruit or nuts - why would this be - anyone know! I recently was brave enough to try Hubbards GF breakfast cereal and went down like a tonn of hot bricks! Sorry I havent got time to read the whole thread but have learned quite a bit from the few pages I have - I live on Venerdi 5 seeds GF bread (toasted) and manuka honey - I love it ((YUMMY)) and recommend it for tastecheers!

Ginger Biscuits
100gm olivani (or butter)
2 tbsp Golden Syrup
2 ½ cups Bakels Bread Mix
1 cup sugar
1 egg
3tsp ginger
Cream olivani and sugar , add egg then ginger then Bread Mix
Roll into balls (don't flatten)
Bake 160 15 minutes.
These are lovely and crisp and keep well without going soft

hi earthangel - yes I use bakels plain flour for everything. I don't care for the texture of their pastry mix so I just make my own using their plain flour.

found some good recipes at these websites also on the gluten free kiwi website under eating G.F in nz if u scroll down enuf it will give u a list of cafes and restuants that gluten free people have sugested well worth a look

If you are gluten intolerant and suffer from diarrhoea make sure you dont have any:seaweed, vege gums, silverbeet, etc and check all those additives and preservatives in packaged gluten free foods that can cause it too :)

make sure you wash any dried fruit believe it or not, some of it is dusted with flour that contains gluten ! :)

Be very careful of spices and herbs you buy most of them are processed on lines that also process gluten containing products :)

can any of the recipes listed with olivani be substitued with real butter! or just other gf spreads!
