Chocolate Cream Squares. (*The biscuit cake*)
Ingredients:
250gwine biscuits 1/2 cup cornflakes 1/2 cup sultanas 125g butter 3-4 TBSPS condensed milk 1 tsp vanilla essence
Method:
Crush wine biscuits and cornflakes finely. To this add the sultanas . Melt together butter, vanilla essence and condensed milk.
Add this to the dry mixture and blend together well.
Press into a swiss roll tin.
Ice with chocolate icing. Sprinkle withcoconut or chopped nuts. *this recipe makes any base for a fudge cake.*
Cream butter, sugar and vanilla essence together, add egg, then mix in dry ingredients. Roll teaspoonfuls of mixture into balls. Put onto greased trays and flatten with a fork . tip, I flatten biscuits using a rounded bottom glass, lightly dusted in flour. It makes the biscuits a more even shape: no cracked edges.}
Bake 15-20 mins at 190 deg C.

These bics are yummy, and are quite classy for a morning tea plate:
Vienesse orange kisses;
220g butter (or marg) 1/2 cup icing sugar 2 TBSPS grated orange rind 1 TBSP cornflour 1 cup plain flour 1/2 cup self raising flour Have butter/marg at room temperature. Cream butter, sifted icing sugar and orange rind until soft and creamy. Add cornflour, mix well. Add sifted flours gradually, beat well until smooth. Fill into a piping bag fitted with a star tube. Pipe in 1 inch shapes on to a lightly greased oven tray. Bake at 180 deg 12-15mins. or until pale golden brown. When cool sandwich together with orange cream and dust sifted icing sugar over the top.
Orange cream: 60g butter 1 cup icing sugar 2 TBSPS orange juice Beat soft butter and sifted icing sugar together until smooth, then gradually beat in orange juice.

I do orange melting moments from one of the edmonds book, very similar to abover recipe. But instead of sticking them together, before cooking I push my finger in the top to make a wee dip. Then put orange icing in the dip when cool and dip the top in chocolate so they are like jaffa biscuits. Very yum!
