I've got some firm black boy peaches and want to make a spongy cake with peach topping. Any ideas?

Upside-down cake! Place sliced peaches in the bottom of the pan, sprinkle over sugar and cover with cake batter. Bake, then rest for 5 mins, then turn out on a plate. Vanilla, coconut or chocolate cake would be good, I think.
