Well tonight its ladies choice and she wants a stir fry... I buy the small 2 piece pack of schnitzel and also the 4 piece to make a meal crumbed.. The 2 pack is cut from frozen into 8mm strips and then cut in half...When it thaws it's parted and set aside...
Fry some left over rice with a tsp of turmeric and some peas.. and set it aside.. Cut some plum tomatoes in half and add rock salt, black pepper and basil..onto oven tray and under grill until just blackened.. set aside.
Wok... tbsp peanut oil.. small red onion and large brown onionand 2 shallots sliced chunkedly... very fined chopped cloves of garlic 3 of them... and let sizzle on high heat... add half an orange capsicum and half a red capsicum sliced in 10cm strips.. some parsley chopped roughly, the stalks of some bok choy and some greens from some spring onion... quick stir and add an oxo cube and a tbsp of light soy sauce and some black pepper.. (no salt) ...toss about for a minute and add the rice and tomatoes and toss again... turn off, cover with tea towel ready for tea time...
Have 4 mushrooms sliced, the bulb ends of the spring onions, and the greens of the bok choy chopped in half and washed..
At tea time,in a small frypan, add a tbsp of peanut oil and colour the schnitzel in batches adding to the wok as you go.. fire up the wok and add the spring onion bulbs and mushrooms.. little more fine chopped parsley and toss until heated through...Serve... Ice cream and Sweet Peaches...

Sweet Peaches
1/4 cup unsalted butter.. 4 tbsp brown sugar ..3/4 tsp cinnamon... 4 ripe peaches, peeled, halved, pitted, each cut into wedges.. 2 tsp vanilla.. 2 tbsp dark rum.. Vanilla ice cream
Method:
Melt butter in large skillet over medium heat. Add sugar and cinnamon and cook, stirring often, until sugar begins to dissolve (mixture may clump together). Add peaches and vanilla. Saute until peaches are tender, stirring occasionally, about 4 minutes. Remove skillet from heat. Stir in rum. Return skillet to heat and cook until sauce thickens, stirring frequently, about 2 minutes. Spoon peaches and sauce over ice cream.

Sounds a good story fisher!! We had our freshly caught terakihi, pan fried, with potatoes, beans and tomatoes from our garden. Yummo.

home made mushrooms in onion and garlic sauce, scalloped spuds with pumpkin, spinach and Sweet potato added to the layers of spuds and onion with cheese on top!mmMmm and the boys had heated up corned beef from 2 nights ago:) Oh and broccoli!

An enORmous courgette/onion/cheese frittata- too hot here to stand at a stove longer than five minutes:)
