Plain Beef Stew Richard Till
2kg piece of beef shin orstewing beef cut into cubes with 3cm sides.
Well-seasoned flour. Oil to brown meat. 2 leeks 4 carrots 3 large onions 3 cloves garlic
6 big flat mushrooms. Stalk or two of celery. 2/3 bottle of red wine. A dozen 0r sopickling onions.
Herb of your choice
Toss the cut up meat in the seasoned flour. Brown the meat in batches While the meat browns, chop the big onions, leeks, carrots, celery , mushrooms and garlic into fine dice. When the meat is all browned, add the vegetables to the pan, and soften and lightly brown. Add the vegetables to the meat, add the herbs, tip in the wine, add water (or stock) until almost or barely covered, put on the lid and put into a 180 oven. Boil the pickling onions for 2 mins, drain and allow to cool. peelAdd them to the stewCook for 4 hours. Let stand for 30 mins before serving.

Nigella Comforting Beef Casserole

1/2 cup oil
2largeonions, roughly chopped
500gms carrots, 1/2 cup flour
Salt and freshly ground black pepper
1 tablespoon dried sage leaves
2 teaspoons ground allspice
4 1/2 pounds stewing or chuck steak, diced
1 large orange, zested and juiced
2 cups stout
2 cups water
4 bay leaves
Heat 4 tablespoons of oil in a large saucepan or deep casserole, and fry the onions and carrots until they begin to soften, about 5 minutes.
Remove the softened and oil-glossed vegetables to a bowl, and add the remaining oil to the pan. Put the flour into a large freezer bag along with salt and pepper, sage, and allspice; add the beef pieces to the bag, tossing in the flour, before searing the meat in the pan. Do this in batches, browning the meat a little and removing all of the beef to a large dish as you go.

cont hen all the meat is browned and out of the pan, whisk or stir in the orange juice and stout and let it come to the boil. Add the water and then return the meat and vegetables to the pan. Stir in the orange zest and bay leaves, bring to the boil and then turn the stew down to a soft simmer. Cover and cook for 2 1/2 hours. .

Have just put on a lamb casserole with lamb pieces, onion, mushrooms, tinned apricots, curry powder, mixed herbs and balsamic vinegar. It's tasting and looking pretty good, am going to cook it for a couple of hours so the Lamb is really tender. Smells great! !

oxtail stew my favourite slowcook an oxtail with a little water in a cast iron casserole dish i do mine on top of the fire, add some gravy beef cook for around 3 to 4 hours add plenty of salt and pepper this is a real treat in our house the meat just melts in your mouth not so good for the hips thoughthus we dont have it much well worth a go!

tastes great - the whole thing was demolished in record time - leave out the mushies if that doesn't appeal but apricots and curry go really well together
