Tomato & veal Casserole. 1/4C plain flour, seasoned with S&P; 4-6 lge pieces of veal osso buco or gravy beef; 1 brown onion, diced; 1 diced carrot;6 cloves chopped garlic; 1/2C white wine; 2C prepared vegetable stock; 800g can diced tomatoes;1/2C chopped fresh parsley.
Place flour in a bag, add veal & shake to coat. Heat 1T oil in a lge heavy based pan. Add veal, cook both sides until lightly browned. Set aside. Add onion, carrot & garlic to pan adding a little more oil if needed. Cook for 2-3mins. Return veal to pan, pour over the wine, stock & tomatoes.
Cook, covered over low heat for 2hr or until meat is tender and coming away from bone. Stir occasionally. Add parsley. Serves 4-6

Russian Mushroom & Tofu Stroganoff. 2 onions finely diced; 4 cloves garlic finely diced; 2T rice bran oil; 1t thyme dried; 500g mushrooms sliced; 3 x 400g tins chopped tomatoes (Blend with stick blender so smooth); 1/3 tin coconut cream (good one, Trident /Kara is best); 1/2t salt or to taste;1C cubed tofu (or white canned beans or other protein) 1 pinch cayenne pepper; 2T honey; Some seasonal vegetables (eg. roasted sliced carrots, roasted pumpkin, red peppers) Cook oil, onions, garlic, mushrooms, oil in pot until onion is clear (lid on is best so mushrooms can sweat) - approx 10 mins. Add remaining ingredients & stir while heating to just about boiling. Add coconut cream last; taste & adjust cayenne/salt as required. Serve on brown rice. Serves 6-8

Steak & Pineapple Casserole. 680g (1&1/2 lbs) beef steak; flour;1 x 425g can each of tomato soup & pineapple; 2-3 onions finely sliced; dash of Worcestershire sauce (optional).
Cut the steak into pieces, flour the pieces, place them in a casserole dish. Pour the tomato soup over, add the pineapple and juice. Add the onions and Worcestershire, if using.
Bake at 180C° (350°F) for about 3 hours.

Chicken & Mushroom Casserole. 8 chicken drumsticks; 1/4C palin flour seasoned with S&P; 2 middle bacon rashers, cut into pieces; 2 onions quartered; 2 cloves crushed garlic; 1 & 1/2C each red wine & chicken stock; 3 sprigs fresh thyme; 12 button mushrooms, trimmed & halved; 2T tomato paste; 1/4C chopped fresh parsley.
Dust drumsticks with seasoned flour. Heat oil in a lge heavy-based saucepan over med heat. Brown chicken in batches, set aside. Add the bacon, onions, garlic to pan, cook stirring for 5mins or until onions are golden. Return the chicken, add the wine, stock & thyme. Bring to boil. Reduce heat to low, simmer, covered for 25 mins.
Add mushrooms, tomato paste & parsley. Increase heat to med- high, simmmer uncovered 15-20 mins or until sauce thickens. Season with pepper.

red wine casserole packet of steak slabs, packet onion soup mix, cup of red wine. Into casserole pot put sliced steak (nice big slices), coat with onion soup mix, pour over red wine, put lid on casserole and bake about an hour. Dont lift lid until done, very yummy with mashed potatoes and veggies.

Lamb casserole with mint dumplings Put into crockpot: 500g lamb steaks - cut into 2cm cubes, 1 chopped onion, 2 chopped sticks celery, 1 can of tomatoes, 1 cup hot water & 1 tsp beef stock. Cook on low 8 hrs, add dumplings 1/2 hour before serving. Dumplings: Sift 1 cup flour, 2 tsp baking powder, & 1/2 tsp salt into a bowl. Cut in 50g butter till mixture resembles coarse breadcrumbs. Mix in enough water to make a soft dough (approx 1/4 cup). Roll dough out into a rectangle, spread with mint jelly and roll up from the long side (like making pinwheel scones) cut into 2cm lengths and arrage on top of casserole to cook.

Pork and Ginger Casserole Got this off a friends Mum it's awesome with some mashed spuds and green beans!

1kg Pork, 1 onion, 1 clove garlic, 1 cup chicken stock, 2Tbsp tomato sauce, 2Tbsp soy sauce, 1Tbsp Sugar, 2tsp fresh ginger, 2tsp chopped basil (or 1/4 tsp dried), 2Tbsp spiced vinegar, salt & pepper to season, 1/2 cup chopped red pepper, 2Tbsp cornflour & 1/4 cup water to thicken if wanted.

I usually just throw everything in the crockpot and cook on low for 8-10 hours, but if you do it in the oven, cook everything except the red pepper, basil, and cornflour/water for 1&1/2 hours on 180 celcius, then add in the red pepper & basil, plus cornflour/water, and cook for further 15 minuts. Enjoy!

Chicken and Apricot Casserole. Ingredients: 4 chicken leg or thigh portions, 2-3 tblsp oil or butter, 2 onions, peeled and chopped, 2-4 rashers bacon, chopped optional, 1 tblsp minced garlic, 1 pkt of onion soup, 1 cup apricot nectar, 410gram apricot well drained, 1/2 cup sour cream optional. Method: Cut the leg or thigh portions in half. Remove the skin if wished. Heat the butter or oil in a large heat-proof casserole and quickly brown the chicken pieces on all sides. Set aside. Add the onion and bacon to the casserole and cook until softened and lightly browned. Add the garlic and cook a further 2 minutes. Return the chicken to the pan. Mix the onion soup, apricot nectar together. Add to the casserole with the well drained apricots. Bring to the boil and cover. Simmer gently on top of the stove for 1 hour until tender. Alternatively cook at 180*C for 1 hour. Season well with salt and pepper and if using , stir in the sour cream just before serving. Serves 4.

this is worth keeping made a great slow cooker stew today & all inexpensive ingredients.
