Whats some baking I can freeze to take camping

Both the lemon yoghurt cake annd pumpkin loaves would be ideal. They freeze really well and also keep really well too.

sponge cake, then you can just add a tin of mixed fruit.

anything you really like, I do a mix of different biscuits, all of which freeze well, gingerbread loaf is nice as well as any fruit loaves. Don't bother with cakes or muffins. I find muffins need to be kept refrigerated or they go mouldy very quickly.
If doing muffins however I would just take enough for a couple of days.
I also make up a scone dough mixture, (which is self raising flour, pinch salt, 1tsp sugar, ½cup chopped dates or sultanas, ¼cup milk powder),I then add water and oil or butter to it and mix and cook in the frypan over a gentle heat. You turn it over once the bottom is nicely browned and cook the top. You could leave out the sugar and fruit and add grated cheese with the water for a cheese variety or just make as plain.
Also do a dry mix for pikelets/pancakes same as above but add the eggs etc when I am ready to use.
