Does anyone have a nice simple yum stuffing recipe?

For a basic sage & onion stuffing I simply cut up some stale bread into smallish cubes, add a finely chopped small onion, some chopped fresh sage (or dried), salt, pepper and a small amount of cold water. Leave to soak for a couple of minutes. Using my (clean ;-)) hands I then squish/mix it all together with one whole egg. Amounts will vary depending on chicken size but if you have made too much to fit into the chook you can always cook it separately along side the roast. Pretty simple :-)
