I love them lightly tossed in a dusting of rice flour then cooked in a buttered pan. The rice flour goes crispy..yummy.

When I BBQ fish I wrap in tin foil with onion slices and lemon slices with a little butter and salt and pepper yumMMM hungry now

Looks like dusting in flour and fried in butter wins by a country mile thats what I think is best too.
I like to get them crispy round the edges because I like to eat the crispy fins.

We have a fisherman friend who fillets the flounders-I know that sounds fiddly - then dusts with flour and bbqs in butter.Delicious!!!

I fillet the really big ones its not too difficult but there is significant wastage.

I love to steam flounder.
I place fish on a piece of foil salt, pepper and put a knob of butter on it and wrap. I then put in a chinese bamboo steamer in my wok with water in it and cook.
