My chefs knife has a broken tip and I am struggling to cut a tomato so think its time to replace! Can anyone recommend a knife set that wont cost the earth. The latest Farmers catalogue have a Stanley Rogers set at half price down from $200 but have no idea what they are like..does anyone have any suggestions?

Global is a fantastic brand if it's within your budget.Prices vary quite a lot and they are sometimes on special.

Thanks for that david, which stores sell the Global brand?

We bought some knives from dogs breakfast and they are AMAZING. I always munt bread when I cut it with the bread knife, but not using the DB ones.

Most kitchenware shops stock them. Some of mine were bought from our local locksmith, whose prices were excellent.Just do some ringing around.Do you have a branch of Living & Giving?I think they sell Globals.

If you have The Mad Butcher in your area & you have a favourite knife, they do free sharpening & they are sooo sharp.

2nd Global. If you can afford it, buy one of their knife sharpeners - they use water and are fabulous.Stevens got one in for me.The sharpeners can also be used for other knives but are designed to maintain the blade of global knives.

The water sharpener is great and almost essential for Global knives because they are made from a slightly softer steel than most knives and can be ruined if they are treated roughly.

My son, who works in the trade, got me a Victorinox which I like a lot, also a nifty little Victorinox tomato knife (the ones with the coloured handles) which I use for all sorts of things, these are only around the ten dollar mark.

Victorinox, Knifecut and Zwilling J A Heenkel are the best three in that order in independant tests.
I would recommend either of those or Wusthof. I am pretty sure Victorinox, Henckel and Wusthof are all available from House Of Knives. Talk to someone who knows knives as opposed to a living and Giving or Stevens store...a great number of their staff know very little aboout cookware sadly. I have had a number of custommers who complain that half the time they dont know what they are talking about when they ask about something relatively simple. You should be able to find a House Of Knives in your area.

I have a big chef's knife that I got re-tipped after breaking off the tip. Cost me about 12 to get it re-tipped - much cheaper than buying a new knife,.

My vote is for Wusthof, then Victorinox. My whole kit s made up of these knives, love them.

I use henkells and I have never seen any quality chef knives at places like farmers. You need to go to a specialist shop like house of knives etc.

Unless you have used a real chef knife you will not realise just how sharp they are.

Agree, steer clear of your Farmers and Briscoes.

Mundial are great too. I have a set which are wonderful. Try house of Knives, not sure if they stock them, I got mine through a professional knife sharpener. But House of Knives stock Victorinox.

I found victorinox great too, the wee one with the serrated edge is superb for cutting tomatoes and other small veges.

Instead of buying a knife set we invested in one Wusthof 16cm Chef's knife and over 10 years later it's still going strong it even comes with us on holiday. We've inherited other knifes over the years but this knife (and I'm sure other top quality brands already mentioned above) is fantastic.Would like another slightly bigger one so two of us in the kitchen arent fighting over it!

The best small knife that I own is a Diogenes, but unfortunately I cannot buy them here.Have had it for many years and is still very sharp.

cookessentials, Nov 15, 6:27am
You need three basic knives. A chefs knife, a slicing knife and a paring knife. If you wish, you can add to that, but those three will do pretty much everything you need.

Agreed- I bought several at Mitre 10 years and years ago and they are still going, have never sharpened them. A few weeks ago we were spreading our own compost of the veggie garden and guess what we found buried in the compost- one of the Diogenes knives that had a year long holiday in the compost heap- obviously chucked into the compost bin in the kitchen with the peelings- and guess what, sharp as ever, no rust, still going strong!

We love our Wiltshire Carving & Paring Knife.Got them on Flybuys witha chopping board.Really only wanted the chopping board & had a few points to expire, but constantly use the knives.Way better than anything we own & cuts through tomatoes so easily!Highly recommend them!

After my Dogs Breakfast knife flew out of it handle, I purchased four new knives from Stevens.I'm really pleased with them. Good price, sturdy.

Son bought me a set of Wusthof Classic knives, they are fabulous
