Gluten free flour

What flour would I use for baking cakes.I need 2 cups of flour but I want gluten free.

Thanks. I have not heard of that but will look at countdown. Does in come in a box or packet.

I bought mine in a box,for about $13.00,it maybe more now,its really nice to use,Melford put me on to it,don,t use anything else now.

Gluten free flour hasn't got gluten - obviously - so you need to get the "sticky-togetherness"-
; from something else.

Most gluten free recipes use either a gluten free flour mix (mixed from grains without gluten) - or coconut flour.

In any case you will need to add several eggs (or something else like guar gum) to stick the loaf together.

So it is not a case of just using "some other flour" but you need a different recipe altogether.

edited to try to get the quotings right - but it doesn't work obviously ...

I mix tapioca starch, rice flour, corn flour and cornmeal...

uli - you do not need to use a combination of flours to "make it stick together" as you have put it. I only ever use Bakels Flour for everything but I do add an extra tsp baking powder. I have been baking for years and years and the texture of my cakes has not altered since I went gluten free. The only thing I have found is choux pastry won't work eg chocolate eclairs

I Have used Bakels, but I prefer Orgran, You can get it at countdown, woolworthsand Pak & Save, I find it has more the consistency of wheat flour..love it...

I must admit that I would use coconut flour plus some eggs in preference to those mixes ... and there are more than those 3 ...

One thing to note with the Bakels mix is that is has milk powder in it, so if you cant have cows milk that could also be a problem.It may also be a good idea to check the ingredients of any other baking (or bread mix) for milk products :)

I think milk products are the least of your problems herika - except if you are allergic to it - just read the rest of the lab report ...
