I bought a cheap cast iron hand mincer off TM a few years back #5 size really transformed wild meats like pork, goat, venison, hare, etc specially the hare and the goat meat. Minced Hare is one of my favourites mmmmmmmmmmmmmmmmmmmmmmmm

Beaker do you have a good recipe for hare as there are plenty running round here at present, not to mention the rabbits as well

For Cherie19.meatballs in ginger sauce
sauce:
5 gingernuts(not the budget ones)
2 1/2 c water
1/4 c brown sugar
2 beef stock cubes
2 Tbsp vinegar
Meatballs:
500g mince
3/4 c soft breadcrumbs
3/4 c wholemeal flour
1 chopped onion
salt n pepper
1 egg
Combine mince with egg and other ingredients. Mix well, shape into balls.
Sauce: soak gingernuts in water in pot for 15 mins then bring to the boil, stirring constantly, add remaining ingredients. Place balls into casserole dish and pour sauce over.Put lid on and cook 20-30 mins at 180
