Hi everyone its Nik'ee here again,I finally got some time on the internet I have 5 kids waiting to use it all holidays long.
2 days ago I made a lovely peanut slice, I sat down and picked the skins off a whole lota peanuts that took at least an hour if not longer I managed to con my oldest son into helping me, I going to the supermarket soon to stock up on food 1 of the things im going to get is peanuts already deskined lol,
I enjoyed making this slice but I do admit I cringed at the amount of butter it took 250grms in the shortcake and another 100grms in the icing/topping, I mostly enjoys pressing the shortcake mixture into the dish it was warm and fun to squish between my (clean lol) fingers. This slice tasted yum when I ate it I had to blook out of my mind BUTTER,BUTTER,BUTTER.would recomend this slice and i'll make it again one day.
Yesterday I made speg bolognese, Once again I got to experence the aroma of browning onions,adding herbs makes different aromas too--beautiful, I make this dish alot for my family but this is the first time I have stuck to a recipe--and it was worth it My family loved the flavour, I will use this again and again.
There arent that many vege recipe in this book, but I made cream corn fritters using a recipe in my book--the family loved them--I ate a little bit of both, I would use this recipe again too.
I havent followed any recipes today as I have run out of butter and flour.thats for reading and supporting me, all my luv Nik'ee B

Hi Nik'ee, loved reading of your cooking adventures and your descriptions of the food you produce.I think this project is a fantastic idea and an inspiration to all cooks, including people like me who enjoy some cooking successes and endure some cooking failures!keep going from strength to strength.

Looking forward to the next chapter..just a hint with the peanuts, if you roast them in the oven first until brown then put them in a tea towel and gently rub them the skins come off very easy and the peanuts are so much yummier roasted first. What did you cook today Nik'ee, gosh 5 children will keep you busy and I bet they are loving all the baking your doing! I havent got that edmonds book but sounds like its worth looking at.

Hi everyone is Nik'ee B here again, sorry its been a cupple of days since my last blog, I have 4 things to write about,
Firstly I made roast chicken with orange and rosemary stuffing, the stuffing part of this excited me as i have rosemary growing in my garden that I call my 'bumble bee' garden,I call it this because all the plants that are in there are blue or purple,these colours attract bees.
I mixed up my stuffing with fresh breadcrumbs,red onion,sage,egg,rosemary,orange-
rind, Mixed it all together and stuffed the chicken, I feelt like a cross between the chickens Gynecologist/mortician I stuffed all the stuffing i could into this bird and tryed to stop it comming out while cooking using metal kebab sticks. It baked most of the afternoon and filled the house with a wonderfull aroma.
I accompanyed the chicken with rosemary and garlic backed potatoes,I used baking paper so I didnt need extra fat.
Then today I baked 2 very easy buscuits recipes, Almond buscuits, and oat biscuits...My oldest girl 13yrs rolled them out for me(she also loves baking)...they tasted great. I would recomend all of the 4 recipes Ive bloged about. thanks for reading and supporting me...luv Nik'ee B.

This is great reading; I can almost smell the onions browning.

Are you keeping a copy of this 'blog' to add to your recipe file? I'm sure that some time in the future you and your children will enjoy going through it again.

The chicken sounds so yummy..I might try this myself and the veges, although the one herb I am not fond of is rosemary I find it too strong and gives me heartburn, so maybe just use a small amount. Its great your children are helping you to bake when they get older you will be so proud of what you have taught them and then you can visit them and eat their baking!lol.

Hi everyone Nik'ee B here,its been a cupple of days since im bloged, I have 4 recipes to tell you about.on saturday the 9.10.2010. we had a sleepover in the lounge sort of like a camp out watching dvds and eating party stuff it was for my daughter Lucys birthday,her birthday is today 11.10.(Monday) but had the party on saturday, all of us together over night in the lounge was her choice of birthday treat, so saturday 1st thing i made was melting moments biscuits with raspberry jam in middle of them.They turned out well agin My oldest daughter Hope helped me roll and flaten them. 2nd I made 2 batches of choco fudge(this recipe is in the original Edmonds cook book) Lucy realy wanted some so I thought i tell you all that i made fudge too. Fudge is fun to make watching it bubble away in the pot and the aroma of sweets in the air, Yum. I would recomend the making of fudge for special treats to everyone--sugar galore but it was her 10th birthday.
then on sunday 10.10. I took on a hugh challenge the 10th birthday cake, I used the edmonds Fielders sponge mix. I made 3 batches of the sponge, with each batch i divided into 3 parts and coloured them all a different colour and baked them 2 at a time in the oven(i only have 2 sponge tins), So anyway I ended up with 10 LAYERS and made different coloured butter icing to go inbetween,It was huge looked a bit like the leaning tower, Lucy looked it it made her giggle at how big it was. I was so tired after that.
4th today I made for tea for our family and the grandparents Fishpie using my project book, I made a little add on to it, I love still browning onions, it didnt say to but onions are great and very good therapy for me. This dish tasted great, we had it with salad. I enjoyed watching the small amount of cheese melt and bubble under the grill. My anxity have been very high the last week or so, so im proud that I have still been able to complete some dishes and write about it--just moving is had for me when im like this I tend to 'freeze' almost to afraid to move--I did it i moved.
Please help me to keep this thread near the top as I am going away to my retreat Monestry tomorrow 12th till sunday the 17th october, so it will be a week untill I can cook and blog again, thanks heaps to all who can comment and help keep this near the top.lots of luv Nik'ee B.

Hi Nik'ee B here, I finialy got online to blog, Ive been battling with anxity and have struggled to do anything I kind of get stuck and frozen, but I have 4 recipes to tell you about. 1st one I did when I got back from my retreat was Ginger bread--I loved the smells of all the spices I put into it,I frecked when it asked for a cup of golden syrup,I look at my bottle of golden syrup and wondered if I would get a cup out of it,It was just alittle short so I put abit more spices in to darken some more and it smellt devine.--tasted great,it was gone by my kidas before it was even cold.
2nd was another loaf called date and nut loaf, I started to make this it said to put dates(I also put dried appricots in receipe said I could) and boiling water and baking soda and then to sit for an hour--the mixture looked frothy and kind of keep raising as the hour went on. started on the 3rd while i waited for hour to be up. For the 3rd I made this lemon slice I made and baked a simple shortcake base then the topping lemon juice and rind and eggs and sugar and custard powder all mixed together,I used a wisk so that i could break up the egg yolks easyer, I enjoyed making this slice tasted yum and easy to make. Back to my 2nd the date and nut loaf, after the soaking for an hour I added nuts i used almonds ment to be wallnuts but hey i only had almonds and added the flour etc and baked it, it tasted yum,my kids diddnt like the nuts but they were full on ginnerbread lol.
4th dish was stry fry fish peices with ginger and lemon-- i loved making like i got to experence the aroma of browning red and white onions this time though an different aroma as ginger was added. tasted great family had it with rice and veges.

Your awesome Nikee, I this week have had to resign from my job due to anxiety attacks, so I understand where your coming from.Its made me feel better to know its not just me dealing with this problem.Look forward to the updates

I'm thinking of you both - anxiety can be hard to deal with - there are threads in the Health Messageboard here, and in the website www.thebigblackdog.co.nz - or www.tbbd.co.nz finds it too. It's a site begun by a Trademe member some time ago now, that many of us belong to - for anyone who is dealing with anxiety, depression, PTSD, etc.,etc. come join us if you'd like to..hugs:-)

Nik'ee, i have enjoyed reading about your journey thriugh the cook book, i applaud you sweetie.
Im an ex caterer and can relate to some of the struggles with having to adapt recipes etc when you just don't have the goods to use lol

I would also like to say that this quote from one of our posts really made me crack up, it was this one ........

I literally laughed out loud and got queer looks from my family lmao.

Keep up the good work sweetie, and if you do find it hard to taste any of your creations, then don't taste them, let your family be the judges etc, don't make yourself ill over the thought of eating meat, if you really can not stand it. xxx
