Icing to go with my cranberry coconut slice??

I just made a no-bake slice
Would cream cheese work? or should I go with white chocolate or lemon icing?? :)

I bought dried cranberries today....would love the recipe for the no bake slice sounds delicious!Thank you!

Here you go Lindy :-)
(Same as apricot slice but using cranberries instead)

INGREDIENTS

250g packet Scotch Finger biscuits, finely crushed
1 cup chopped dried cranberries
1 cup desiccated coconut
395g can sweetened condensed milk
100g butter, chopped
50g white chocolate, melted

METHOD

1. Lightly grease and line an 18 x 28cm slice pan with baking paper.
2. In a large bowl, combine biscuit crumbs, apricots and coconut.
3. Combine condensed milk and butter in a medium saucepan. Stir over low heat for 4-5 minutes, until smooth. Pour over dry ingredients and mix well.
4. Press mixture firmly into prepared pan. Chill until firm. Drizzle top with chocolate. Chill until set.

Sounds delicious.. I'd have made lemon icing too..

I've made something similar, and didn't have biscuits so used crushed cornflakes instead.. worked well..

definately lemon icing.. the tartness will make a nice flavour contrast
