is it called tiroi? how do you make it? ... i tryed some once an it was delish

Puha & Mussels
Add 10 litres of salted water to your pot and bring it to the boil. Add your
Puha and boil for one hour. Pour the puha and the water out into a bowl
and leave to stand while you steam your mussels open by adding ¼ cup of
water to your pot and using the handles provided lower a basket filled with
mussels into the unit. Steam until open, which should be approximately 15-
20 minutes.
Add the mussels to the puha with the water they were cooked in and serve
the next day with mashed potato or sweet potato/kumara.

Mussel Toroi

Serves 4

1 bunch watercress or puha, well washed
Salt
12 mussels, shelled

Boil the watercress or puha in salted water for 10 minutes.
Strain.
Chop the mussels into small pieces and boil in hot water for 10 minutes.
Add the watercress or puha to the mussels and cook for a further 20 minutes.
Allow to cool in the mussel juices, then place in airtight jars and refrigerate. This will keep in the refrigerator for up to 2 weeks. Serve as a soup alongside your favourite steak.

When buying mussels for toroi, make sure they are the freshest available. Collecting your own is even better.

Pikopiko or turnip-tops can be used in place of watercress and puha if desired for a variation in taste and texture. An extra 10 minutes cooking time will be necessary for the pikopiko, however.

I dont boil in salt i use a cold mixture of cold water and use salt to tast then add onions to the puha bottle and put in fridge mighty meal on toast

hey that's a long time to cook kaimoana. Think I'll try adding the mussels, after the puha is done without additional cooking

my gran mother made toroi all the time and it was never boiled for a long time at all the mussels were steamed until just cooked in their shells then taken out of the shells put aside next strain the water they cooked in and save next prepare puha or watercress by blanching in boiling water with salt to taste for about 5min take out and rince under cold tap then chop up next bring the saved mussel juice you saved to the boil add your puha mussells salt and pepper to taste enjoy....
