My flatmate doesnt like cocnut milk. Can I use cow milk?

Dont use cows milk, I'm pretty sure it will curdle. Use a bit of normal cream (like half a cup) or even better evaporated milk.

You would probably find that they wont even notice it in this great dish.

I have found adding a teaspoon of cornflour to the milk stops it from curdling.

along with what alba said above, add 1-2 chopped cloves of garlic, 1 hunk of fresh chopped ginger, 1 teaspoon of Galangal, 1 teaspoon of tamarind paste, a teaspoon of sweet thai chilli sauce, 2 table spoon of Thai Fish Sauce, 1 stalk of fresh lemon grass chopped finely, fresh chopped basil and garnish with fresh chopped coriander... . . the extra ingredients makes the flavours pop :)
