Anyone have the McCafe Carrot walnut & bran muffin

I love these muffins and I think I have also seen them in WildBean. Does anyone out there have the recipe? I think they also have coconut in them... ... thank you

mmm. they are the only food i eat at McDonalds, the odd hamburger, but just love those muffin. s
if anyone has a recipe like it, please post on here.

Hi korbo, these are the ones we make & they freeze well. 3C bran , add 1C boiling water & set aside. 2 beaten eggs, 2C milk, 1C yoghurt, 1/2C oil or butter, 1C sultanas, 1/2C dried apricots, 1/4C walnuts( opt ). ( You can add mashed banana or passionfruit ) 2 1/2t baking soda, 1/2t salt, 1/2C brown sugar, 1 1/2C flour, 1C wholemeal flour. I just make as usual220 for 15-20 mins. Makes quite a few & you can vary the fruit.

Usually you can ask for an ingredients list form the place and they have to provide, that should give you most of the ingredients. Then you have to work out measurements.
