Stir fry Beef in Coconut - one of my favourite stir-fry beef recipes :)
Ingredients • 500 grams beef, thinly sliced • 2 cloves garlic, finely chopped • 2 teaspoons ground coriander • 2 teaspoons grated palm sugar or soft brown sugar • 2 teaspoons finely grated lemon rind • 1 teaspoon fresh root ginger, finely chopped • ½ teaspoon ground turmeric • ½ tablespoon fish sauce • 3 tablespoons peanut oil • ½ cup desiccated coconut • 3 spring onions, cut into thin strips • ½ cup (125 ml) coconut milk Method 1. Mix together the garlic, coriander, sugar, lemon rind, ginger, turmeric, fish sauce and 2 tablespoons of the oil. 2. Add the beef, toss well to coat, cover and chill for at least one hour – preferably overnight. 3. Heat the remaining oil in a wok or frying pan. 4. Stir-fry the meat until well browned. 5. Add the coconut and spring onion and stir-fry for a minute more. 6. Add the coconut milk and stir until heated through. 7. Serve with jasmine rice. Another sauce combination I like for beef (about 300grams of beef) is
• 2 tablespoons fish sauce • 1 tablespoon oyster sauce • 1 tablespoon sugar • pinch white pepper
Double everything if you have more beef or if you add a lot of veges to the stir-fry...
