HAWAIIAN MUFFINS - 2 cups self raising flour - 1/2 tsp salt - About 100g sliced or diced ham - 300g can of crushed pineapple - About 3/4 cup milk - 50g butter then Melt - 1 large egg - 1½cups of grated cheese Measure flour and salt into a large bowl. Add ham and grated cheese and toss everything together with a fork. Drain pineapple, reserving the juice. Make the juice up to 1 cup with the milk. Put crushed pineapple, liquid mixture, melted butterand egg in a smaller bowl and mix until well combined, again using the fork. Pour the liquid into the flour mixture and fold together until the flour is moistened, taking care to avoid over mixing. Spoon the mixture into 20-36 mini-muffin pans (or 12 regular pans) that have been sprayed with cooking spray or lightly greased. Top muffins with a little extra grated cheese. Bake at 210 degrees Celsius for 12-15 minutes or until tops and sides are brown. Regular sized muffins will take a little longer. Remove from oven, allow to cool in the pans before turning out on a wire rack to cool completely.
