Combine the above and knead in the flavouring of your choice.
Suggestions:- 2-3 tablespoons of choppeddried fruit ( apricots, raisins, dried mango or pineapple)
2-3 tablespoons of chopped toasted almonds, walnuts, pistachios, macadamia, peanut or what ever takes you fancy.
Herbs can work nicely—try1-2 tablespoons of chopped fresh rosemary.
Exchange the white sugarfor brown sugar, and perhaps tryadding a little cocoa and some chopped toasted peanuts, or perhaps 2 tablespoons of chopped ginger along with some dried ginger.
Once you’ve selected your flavourings, and worked them into the dough, make into a long roll and wrap in waxed paper and chill for at least an hour—overnight or up to 7 days.
Slice into discs and place on baking paper or lightly greased over trays, and bake at 180c for up to 15 minutes.
