Cauliflower cheese

Can I use uncooked cauliflower? Am trying to cheat a little as have heaps to do for big family dinner/celebration! All the recipes say steam cauliflower b4 baking with the sauce... . .

I cook mine with broc and use the cooking water in the cheese sauce! ! mmMmm Then its not too heavy and has a loverly taste:)

i would cook it first, otherwise you're going to have hard cauliflower, it wont cook in just the cheese sauce. have you got a microwave, just cook it in there for a few minutes first.

I have used raw cauliflower plenty of times, I just cover the dish with tinfoil and cook until almost done then remove the tinfoil so the top can brown, maybe grating a little extra cheese over the top as well. Only thing is it will take longer to cook than if you partly cook the cauliflower first, the microwave as suggested above is a good option but only part cook it or it will be too mushy.
