***Crispy biscuits?**

Has anyone got a nice receipe for crispy crunchy biscuits?

Look up a recipe for 'instant pudding' biscuits, theyre always crunchy.

And leave them on the tray for 10 mins after taking them out of the oven and they will always be crisp.

Gingernuts

Leave them until they are a nice golden brown to get the crispness - but watch they don’t burn!

125g butter
1 cup caster sugar
1 tablespoon golden syrup
1 egg
2 cups self raising flour
3 teaspoons ground ginger
1 teaspoon bicarbonate of soda
extra sugar

Preheat oven to 180 deg C. Grease biscuit trays and line with baking paper. Sift flour, ginger and soda. In another basin cream the butter, sugar and golden syrup. Add egg and beat to mix. Add dry ingredients. Roll teaspoonfuls in extra sugar. Bake until nicely browned.

All my biccies from edmonds recipes come out crispy. I reckon the trick is to thoroughly cream the sugar and butter, have enough flour that the dough is a soft playdough texture (I actually reduce the butter from 125g to 100g most of the time in order to adjust the ratio) and flatten them to 5-7mm thick. Thicker biccies are cakier in texture. Alas, my daughter likes soft biscuits like the Americans prefer, so I store some for her with a slice of bread to make them soft.
