Breadcase fillings

I have made lots of breadcases from leftover (stale) bread and am at a loss of what to fill them with. Any ideas will be gratefully accepted. Thanking you.

Mushrooms, mashed potato with onion and cheese sprinkled on top. Grated cheese and onion and an egg mixed into but needs to be quite thick. Spaghetti and cheese, smoked fish in a white sauce are a few that I can think of.

Creamed mushrooms
Chicken & Mushroom in sauce
Mince with potato on top
Cheese & onion
Asparagus & corn in sauce
Cauli or broccoli cheese
Leftover spag bol, topped with cheese
You could use a can of condensed soup as a sauce for fillings. Chicken or mushroom make a great sauce.

Bread Cases
1 loaf wholemeal bread, crusts removed
olive oil spray
Suggested fillings
• Light sour cream with smoked salmon, topped with capers or fresh dill
(cold)
• Creamed corn, cheese and bacon (heat through)
• Spinach, feta, egg and grated edam cheese (bake until set)
• Mushrooms, bacon and light sour cream (serve hot mixture in cold cases)
• Low fat cheese sauce with ham and asparagus or other savoury
ingredients (heat through)
• Tomato, bean and vegetable mixture topped with cheese (heat through)
Spray patty pan tins with oil spray; cut bread into appropriate sized circles or
squares and press into patty tins. Spray lightly with oil spray and bake at
180C for approx 10 to 15 minutes until golden brown and crisp.

Cut the crusts off the bread and butter one side. Place in muffin tin and cook in a 180c oven for about 10 mins to go crusty

Bread Savouries
Ingredients
• 1 tsp Mustard Powder
• 2 Tomatoes, chopped
• 1 Loaf of Sandwich Bread, crusts removed (there are 21 slices in a loaf)
• 1 ½ c Grated Cheese
• 4 Eggs
• 4 tbsp Milk
• ½ Onion, finely diced
• Salt
• Pepper
Directions:
Grease 2 muffin trays (or make two batches if you only have one tray).

Beat together the eggs, milk, onion, mustard powder, ½ tsp salt and a good grind of black pepper.

Press a slice of crustless bread into each hole in the muffin tray.

Add a goodly pinch of grated cheese, then on top, a little tomato.

Spoon some of the egg mixture over the cheese and tomato.

Bake in a 180 °c oven for 15 mins.

Serve warm.
