This is a good recipe for 600g cape gooseberries. I collect them as they ripen, wash and freeze them until I have enough. The recipe is from Jams, jellies and other preserves, rev. ed. published in 1977 by the Dept. of University Extension in Dunedin.
Cape Gooseberry and Lemon Jam 600 g cape gooseberries 1 lemon, juice and rind 1/2 cup water 2 cups sugar
Cook lemon rind in water 30 minutes, drain, discard skins, measure liquid. Add to lemon juice to make up to 1/2 cup. Cook cape gooseberries in lemon juice liquor until tender, (about 10 minutes) .stir continuously ( I mash them a bit with potato masher). Add sugar and boil fast until setting point is reached.
