I cook my meatball/patties in muffin tins in the oven, so much easier than in a fry pan. I cover loosely with tinfoil for first part of baking then remove.

Has anyone got a good tasty recipe for meatballs? Mine always seem a bit on the dry side.

Italian Pork Meatballs with Tomato (overnight) Ray McVinnie
serves 6
1 kg minced pork 10 fresh sage leaves, finely chopped 5 cloves garlic, finely chopped 1 tsp fennel seeds 1 tsp salt 1 tsp black pepper 4 tab olive oil 2 red onions, finely chopped 3 red & 3 yellow capsicums, sliced 200g button mushrooms, halved 1 c black olives 800g tinned tomatoes, chopped 2 tab tomato paste 250 ml water parmesan to serve
Combine pork, sage, 3 cloves garlic, fennel, salt and pepper, refrigerate overnight.
Form into 20 balls, brown in oil in large pan. Add onions, rest of garlic, capsicums, mushrooms and olives and fry until well browned. Add tomatoes and tomato paste and water, bring to a simmer and cook 20 - 30 minutes until sauce is thick and jammy. Check seasoning. Serve with freshly grated parmesan on the side.

Turkish Lamb Kofte (Meatballs)
Kebabs
500 minced lamb, beef or free range chicken 1 clove garlic, crushed 1 ripe tomato, diced finely 1 tsp pomegranate molasses 1 heaped tab Kofte spice mix (see below) black pepper salt olive oil for frying
Mix all and knead several minutes. Chill at least 20 min.
Shape into balls (or mould on to skewers in fat sausages), shallow-fry in olive oil or grill until golden and completely cooked.
Serve with salad of parsley, mint, onion, lemon & sumac, with warm flatbread.
Kofte Spice Mix
1/3 c ground cumin 1/3 c dried mint 1/3 c dried oregano 2 tab sweet paprika 2 tab black pepper 2 tsp hot paprika

I grate a courgette into mine, along with an egg, salt and pepper, a splash of sweet chilli sauce, breadcrumbs onion and some beef stock powder.

These are lovely! Meatballs-500g mince, 250g sausage meat, ½uncooked rice, 1tsp curry powder, salt & pepper, 1 egg, 1 onion, 1 Tbsp chopped parsley. Sauce-½cup water, ½cup tomato sauce, 3tsp Worcester sauce, 2 Tbsp vinegar, ¼cup brown sugar, 2Tbsp fruit (I use Branston chutney) or tomato chutney. Combine over low heat until sugar is dissolved. Bake in moderate oven 30-60mins. Baste occasionally.

I don't have a recipe but use a variation of a Swedish one I read years ago. It has 2 slices of bread soaked in milk,until mush, then the rest of the ingredients are added. I add worcestershire sauce to the mush.
