Im looking for a recipe for a leek and potato soup with a bacon hock without cream in it, anyone have one? I dont mind if i have to slow cook it

Fry onions, add bacon hock and some water or stock and simmer until done.
Lift out bacon hock and add leeks and potato. When done add meat from hock and check for seasoning, maybe some more pepper or chilli? Usually the hock and the stock have enough salt.
Could add some parsley or other herbs if wished.
Personally I would add some fried onions and bacon bits when serving and of course some cream :) but that is optional.
You could try one day with coconut cream - that is another taste revelation of course.

I'd like to add to uli's recipe a reminder that the skin on the bacon hock is delicious and very nutritious. I peel it off the cooked hock, slice into very thin strips and return to the soup.
