Does anyone have a simple diced pork curry or stew recipe?

I used to make one where I would shake the pork in flour and creole seasoning and s&p, then brown in a frying pan, put in a casserole dish and add onions veges and relish of some kind (there was a sundried tomato & olive one i liked) or apricot jam or something and water and s&p. then just bake for ages - an hour maybe? on 180 i think? sorry it was quite a while ago!

Sweet & Sour Pork
600g diced pork 1 onion sliced 1 cup each sliced carrot, green capsicum, celery 1 level tablespoon soy sauce ½ level teaspoon chopped ginger 2 level tablespoons cornflour 1 level tablespoon sugar ½ cup pineapple pieces (no sugar added) 1½ cups pineapple juice (no sugar added) ¼ level teaspoon Chinese 5 spice 2 level teaspoons chicken stock powder 1 level tablespoon tomato sauce 2 level tablespoons tomato paste
METHOD
Prepare all vegetables, leave to one side. Brown pork in a non-stick fry pan that has been coated with cooking spray. Add onion, carrot, capsicum and celery, cook 5 minutes. Add ginger, soy sauce, sugar, 5 spice, stock powder, tomato sauce, tomato paste and pineapple pieces. Blend cornflour with pineapple juice, add to pan. Cook a further 5-7 minutes or until vegetables are just cooked. Serve with rice
