4 large boiled potatoes, 3 hard boiled eggs, 3 chopped bacon rashers, 1 large onion, 1/4 cup butter, 1/4 cup flour, 1 tsp mustard -------- approx 2 cups milk, 1/2 cup grated cheese, 1/2 tsp salt, 1/2 tsp celery salt, shake of pepper, 1 tbsp butter, 1 cup soft breadcrumbs.

Boil, cool, then slice the potatoes 1/2 " thick. Chop, halve or quarter the hard boiled eggs. ----- In a medium sized saucepan, melt butter and cook in it the bacon and onion. When onion is tender, but not brown, add the flour and mustard. Add the milk in 3 parts, boiling and stirring while adding. When the sauce has boiled after last addition, remove from heat and stir in cheese and seasonings. ---- Arrange half the potatoes and eggs in an ovenware dish. Cover with half sauce. Add remaining potatoes, eggs, then pour on rest of sauce. ---- Make breadcrumbs, melt butter and toss crubs in this to coat fairly evenly. Sprinkle crumbs over the sauce. Bake uncovered in a moderate oven (350F or 180C for 30 - 45 mins or until centre has heated and the topping golden brown.
