2 tbs virgin olive oil and a tbs of red wine vinegar or balsamic vinegar into a screw top jar to shake and mix to combine.

Here is a greek salad with most of items you noted.

Greek chopped salad

Ingredients

2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 baby cos lettuce
1/4 small red onion, thinly sliced
2 medium tomatoes, roughly chopped
1 Lebanese cucumber, quartered lengthways, chopped
1/4 cup pitted kalamata olives, roughly chopped
60g feta cheese, cubed
1/4 cup roughly chopped fresh basil leaves
Method
Place oil and vinegar in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.
Remove outer leaves and core from lettuce. Separate leaves. Wash and pat dry with a tea towel. Roughly chop. Place lettuce, onion, tomato, cucumber, olives, feta and basil in a bowl. Add dressing. Toss to combine. Serve.

Note, you can use Rocket instead of baby cos and could leave out the olives, Normal cucumber can be used instead of the Lebanese Cucumbers.

50/50 oil and vinegar, (Olive oil) 1 small crushed garlic clove, a small amount of mustard, and salt.

My fave dressing for any leafy salad is Annabel Langbeins Dijon mustard vinaigrette.I always have a jar of it mixed up over summer to dress any salad we have.
