Hi I make delicious gluten free muffins that have soy flour in them but at the moment I can get any - does anyone know a substitute beside buckwheat! I like the soy flour as it has protein in it. thanks

Quinoa or chickpea flour both have protein. Or millet and fine cornmeal would work.

Why would whey contain soy! It is made from milk, so there is nothing else added if you buy "natural nz whey protein powder". There are other protein powders around which combine soy, whey etc, often with colourings, flavourings and preservatives added to make drinks that taste like fruit. I don't think they would be suitable for a bread.
