Apple cake recipe for firemansgirl

hey there guys, remember my curdled cake that came out fab!
heres the recipe
its an alison holst
tweeked by yours truly
enjoy

apple cake
1cup brown sugar
1 cup brown sugar
2 large eggs
4 med apples peeled and grated
200gm butter melted
2tsp mixed spice
2 tsp cinnamon
1/4 tsp cloves(optional)
1/4 tsp nutmeg
2 cups self raising flour
1tsp baking soda

whip butter sugar and eggs into a frenzy till lovely ad thick
but if it looks as if it will curdle add a spoonful of flour between each egg
stir in the grated apple and lastly fold in the flour soda and spices

this is a large cake as most apple cakes are soo darn thin!
bake 180 for about 30-40 mins
till a knife comes clean from the centre and or the cake springs back when you touch it

cool then ice
this icing is to die for!

3cups icing sugar
125 softened butter
a good tsp cinnamon
2-3 tbspoons milk

using electric beaters, beat the butter till pale and creamy
add i1 cup of icing sugar at a time till all combined
add cinnamon and beat till pale and fluffy
adding 1 tbsp of milk at a time as needed to get it really light and fluffy
add more cinnamon to taste if needed
this makes a lot of icing and theres no reason you cant make the recipe into cupcakes and ice them
this makes enough to ice top and sides very generously

l don't mean to be picky but the brown sugar is listed twice so wondering if there was something was missed!
Sounds like a nice recipe though, will wait to hear from you and then may try it

woops should read1cup brown and
1 cup white
sounds like a lot so its possible you could reduce it maybe by 1/2 a cup of sugar totalbut even with it all in is beautifully moist
i made this again yesterday this time i used oil and it came out really well
also no risk of curdling with oil

I made this cake, thank you so much, and it was eaten in one and a half of a day lol, it was yummy (from paula not user name Mark!)

Well l made this tonight and l came up with a new pudding
The phone rang at a crucial stage and l didn't put the spices in
l found them sitting on the bench when l was cleaning up and cake was half cooked
l also put in 6 smaller apples instead of 4 so the result was a nice caramel type very apple pudding which tastes very nice even without the spices
Hubby was very happy and asked me to make it again
l will try again tomorrow and hope to get it right
